Whatcha' Got Cookin'??
Well, since you asked SO nicely... Tonight we are having Potato Ham Chowder. I found this recipe in one of those Betty Crocker Cookbooks they have in the checkout aisles. I have about a dozen of those cookbooks. I love them. Sometimes I will only use one recipe in that book, but it is such a yummy recipe that it was worth the $2 I spent for the book. This is one of those recipes. It's perfect for a cold, drizzly day. And even more perfect for cold, drizzly SUNDAY since it is made in the crockpot. No muss, no fuss.
Potato Ham Chowder
1 box scalloped potatoes (plus the seasoning packet)
4 cups chicken broth
2 celery sticks, finely chopped
1 cup diced ham (I usually just buy a thing of good ham lunch meat and chop that up)
1/2 cup finely chopped onion
1/8 tsp black pepper
Stick that all in the crockpot and cook on low for 7 hours. Mmmmm. It smells SO good right now... After 7 hours whisk together (you don't want any chunks of flour):
2 cups Half and Half (I am trying fat free half and half for the first time today)
1/3 cup flour
Add this to the soup and cook for another hour on low (or 30 minutes on high if you have 1:00 church plus choir and your family is starving). Stir occasionally.
We like to eat this with homemade bread or with french bread grilled cheese sandwiches. And salad. I must admit that my kids don't eat this soup, though I don't know why. It is really mild and TOTALLY yummy. I think I am going to experiment tonight and add a few drops of tobasco sauce to my bowl. I am on a spicy kick.

This IS a great recipe. We have made it several times and it sits in my "keeper" recipe file. I think you submitted it for a RS cookbook a few years back?
And I also have a collection of those grocery check-out cookbooks. :) I was big into collecting those when we were first married.

kay--I just tried this for dinner tonight and it was super good! Thanks for the idea! Oh, and I sort-of missed the part that it takes 7 hours in a crock pot..so I just cooked it on the stove and it turned out really good!
